- Ensure that all work is carried out as per the client specification.
- Plan, organize and control the restaurant services to ensure prompt, efficient and quality service to customers as per the required standards advised by superiors.
- Liaise with superior to discuss day-to-day operational requirement and to review achievements and improvements.
- Ensure that the subordinates are trained to achieve excellence in customer handling.
- Ensure awareness of the ‘Menu for the meal’ served and update his subordinates accordingly.
- Assist the chef by ensuring the efficient operation of designated food and beverages areas.
- Ensure that the restaurant counter is ready; all the necessary items are available and well presented.
- Ensure smooth and timely supply of prepared/cooked food to restaurant as and when required to refill the counter without any interruptions in the service.
- Closely monitor the staff during service hours and guide them as and when required.
- Prepare duty roster of staff on site and monitor compliance. Ensure proper allocation of duties to control overtime and proper manning levels at all times.
- Check incoming supplies from stores for quality, quantity, damage and spoilage.
- Ensure the correct storage of restaurant items and that stock rotation procedures are maintained.
- Ensure that all machines and equipments in restaurant are in working order and inform the malfunctioning to the concerned immediately.
- Perform any other task assigned by superior within the scope of work.
- Knowledge in computer essential: Should be able to work on MS Office.
- Should be a Graduate or Diploma / Degree in Hotel management
- Having experience of at least 10 years in the industry and 2 years in the required position
- Having good communication skills to develop a good client / customer relationship
- Fluent in Portuguese.
